Studies on seasonal affective disorder show us that our bodies naturally respond to changing daylight patterns. Research found that people experience seasonal rhythms in food intake, with increased consumption of carbohydrate-rich foods during winter months and decreased intake during summer.

Your hypothalamus, which regulates hunger and satiety, is deeply connected to light exposure and seasonal changes. The circadian timing system controls not just when we feel hungry, but what types of foods we crave. During shorter winter days, our bodies may naturally seek more calorie-dense, warming foods to maintain energy and mood stability.

The research shows that seasonal changes in appetite serve important biological functions. Winter carbohydrate cravings may help boost serotonin levels during darker months, while summer preferences for lighter, water-rich foods support hydration and cooling when temperatures rise. Eating, like many biological functions, displays this daily and seasonal rhythm controlled by our internal timing systems

Spinach

Fresh spinach is having a moment in my kitchen lately, and not just because it's everywhere right now. These tender, earthy leaves are so much more versatile than the wilted pile most of us remember from childhood. Baby spinach practically melts into scrambled eggs (tofu for me), while the heartier mature leaves hold their own in warm salads and grain bowls.

What I love most about spinach is how it sneaks nutrition into almost anythingβ€”toss a handful into smoothies (you won't even taste it, I promise), layer it in lasagna, or fold it into creamy pasta dishes. Those deep green leaves are loaded with folate and iron, plus they're one of the best sources of lutein for eye health.

Pro tip: Don't just think salads. Try wilting spinach with garlic and a squeeze of lemon as a five-minute side dish, or blend it into pesto for a vibrant twist on the classic. Even the pickiest eaters in my family don't notice when I sneak it into meatballs or quesadillas.
