Yuzu

Yuzu is like the cool, mysterious cousin in the citrus family that not enough people know about. This Japanese fruit has a unique tart and fragrant flavor that falls somewhere between a lemon, mandarin, and grapefruit – but with its own special aromatic twist that can't quite be replicated.

Unlike regular lemons or limes you might just squeeze into drinks, yuzu is prized for its intensely aromatic oils in the peel. I've fallen in love with using the zest to brighten up everything from salad dressings to marinades. The Japanese use it in their famous ponzu sauce and yuzu kosho (a spicy fermented paste).

You might not find whole yuzu fruits easily at your local market, but look for yuzu juice, yuzu marmalade, or yuzu hot sauce at specialty stores or Asian markets. Even a few drops can transform a dish with its complex citrus notes.
